before canning to lock in their bright flavor. These whole grilled red peppers
have thick walls and triangular shape that has earned them the name
“piquillo,” or “little beak.” Because of these qualities, piquillo red peppers
are ideally suited for stuffing with cheese or meat and baking, but can also
be used in any application one would generally use bell peppers. They deliver
a slightly sweet and tangy flavor complemented by a touch of smoke from the
grill, adding a rich flavor profile to hot or cold appetizer, antipasto, and
