Every Occasion: Seafood Risotto Ingredients 7.5oz Can Minced Clams, 15oz Can
Diced Tomatoes, 4 Tbsp. Carbonell 100% Pure Olive Oil, 10 Mussels, 10 Clams, 1
cup Sliced Calamari, 2 cup Broth, 1/2 cup Chopped Onion, 2 Cloves Garlic, 2
cup Arborio Rice, 1/3 cup Dry White Wine, 1 tsp. Salt, 1 Tbsp. Fresh Thyme,
1/4 tsp. Chili Flakes, 1/4 cup Grated Parmesan Cheese, 2 Tbsp. Parsley
Directions Drain tomatoes and clams, reserving liquids. Combine tomato and
clam liquid with enough broth to make 3 cups. In saucepan, heat 2 Tbsp. olive
oil. Sauté whole clams and mussels until open. Add calamari, clams and
tomatoes and sauté until lightly cooked. Remove from pan. Add 2 Tbsp. of olive
oil, onion and garlic and sauté until tender. Add rice, wine, salt, thyme, and
chili flakes, stirring over medium heat until liquid is absorbed. Add stock
1/2 cup at a time until rice is tender and creamy. Remove from heat; stir in
parmesan cheese and seafood mixture. Cover and let stand for 2 minutes. Plate
with fresh parley and olive oil drizzle. Read more
